From the email Wikimania 2019: Important Event Reminders this morning: "Plate of smoked salmon, potato salad with vegetables, bread & butter" but "To meet our sustainability goals, we are not printing paper programs". I would like to see some approximate numbers on the environmental impact (at leas the carbon impact) of the food and (avoided) printing.

It's not clear from "If you find this will not be sufficient or does not meet your dietary needs, we suggest you have a meal beforehand" whether this means that vegans should eat elsewhere, or whether it's safe to assume that for instance "bread and butter" means normal rye bread and plant-based margarine will be available.
